Chef Fredy’s Table sits on Speedwell Ave in a space that used to belong to a different restaurant entirely. The transition matters because what Fredy Umanzor built here — out of a former life as someone else’s kitchen — is one of the most personal restaurants in Morristown.

The menu is El Salvadoran with reach. There are pupusas made the right way, but there’s also handmade ravioli stuffed with lamb and fig goat cheese, and Belgian-style clams that would be at home at a seafood restaurant charging twice as much. This isn’t a restaurant that stays inside a lane — it’s a restaurant that cooks.

The BYOB situation is ideal: no corkage fee, and there’s a liquor store directly next door. Bring something worth drinking, because the food will earn it.
